These Miso Chocolate Chip Cookies are perfect for some mindful indulgence. They are a healthier take on a sweet treat that is also good for your gut. The gut-friendly miso adds a little savoury surprise that balances well with the sweetness of the chocolate and Maple Syrup or honey.

These Miso Chocolate Chip Cookies are perfect for some mindful indulgence. They are a healthier take on a sweet treat that is also good for your gut. The gut-friendly miso adds a little savoury surprise that balances well with the sweetness of the chocolate and Maple Syrup or honey.

Flourless Miso Chocolate Chip Cookies

Ingredients

  • 210g X Almond butter
  • 40 g X Miso – we love Kultured Badger Bean Miso
  • 1 X Large egg
  • 60 ml X Maple syrup or local honey
  • 10g X Cornflour
  • 1 tsp X Baking soda
  • 90g X 85% Cocoa chocolate chips

Method:

  • Preheat an oven to 175 degrees centigrade, 350 Fahrenheit, gas mark 10. Line a baking tray with greaseproof paper.
  • Using a hand mixer beat together the almond butter, miso, maple syrup and egg for 2 minutes.
  • Incorporate the cornflour and the baking soda and mix well.
  • Fold in the chocolate chips.
  • Split the mix into 12 equal amounts and roll in your hands to form a ball shape, place on the lined baking tray making sure to leave plenty of space between each cookie.
  • Bake for 12 – 14 minutes, until the edges turn brown.
  • Remove and allow to rest.
